Vegan Chocolate Chip Cookies

Recipe from Vegan Cookies Invade Your Cookie Jar

Ingredients

  1. 1/2 c brown sugar (light or dark are both good!)
  2. 1/4 c white sugar
  3. 2/3 c oil
  4. 1/4 c nondairy milk (I use soy, reconstituted from powdered)
  5. 1 Tblsp tapioca flour (subbing cornstarch works ok)
  6. 2 tsp vanilla
  7. 1 1/2 c flour
  8. 1/2 tsp baking soda
  9. 1/2 tsp salt
  10. 3/4 cup chocolate chips (double check they are vegan!)

Instructions

  1. Mix the sugars, oil, nondairy milk, and tapioca flour (Items 1-5) well for at least two minutes - you’re looking for a smooth caramel texture
  2. Mix in the vanilla
  3. Stir in flour, baking soda and salt (Items 7,8,9)
  4. Fold in chocolate chips

Bake at 350 degrees, for about 10 minutes. I line the pan with parchemnt paper and I use a cookie scoop. They are a bit delicate so let them rest on the pan after baking for about 5 minutes before you transfer to a cooling rack.

I’ve been really pleased with these, and they are my go-to for a party where I want the vegans to be as happy as everyone else.
