(Vegan) Fudgy Brownies

I think this recipe comes from America’s Test Kitchen, but their website is so locked down I can’t see enough to double check.

Original recipe calls for unsweetened chocolate chopped fine in the batter - I use semi sweet chocolate chips.

Ingredients for Full Recipe

  1. 1 cup boiling water
  2. 3 oz semi-sweet chocolate chips (note that not all choc chips are vegan)
  3. 2.25 oz cocoa powder
  4. 2 1/2 cups sugar
  5. 1/2 c oil
  6. 1 Tblsp vanilla
  7. 2 cups all p flour
  8. 1 tsp baking powder
  9. 3/4 tsp salt
  10. (optional) additional 1/2 c semi-sweet chocolate chips

use a 9”x13” pan for the full recipe

Ingredients for Half Recipe

  1. 1/2 c boiling water
  2. 1.5 oz semi-sweet chocolate chips (check for vegan)
  3. 1.12 oz cocoa powder
  4. 1 1/4 c sugar
  5. 1/4 c oil
  6. 1 1/2 tsp vanilla
  7. 1 c all p flour
  8. 1/2 tsp baking powder
  9. scant 1/2 tsp salt
  10. (optional) additional 1/4 c semi-sweet chocolate chips

use an 8”x8” pan for the half recipe, or a 9” round cake pan

Instructions

  1. Whisk together boiling water, chocolate chips and cocoa powder until melted. (Items 1,2,3)
  2. Whisk in sugar, oil, and vanilla (Items 4,5,6)
  3. Stir in flour, baking powder and salt (Items 7,8,9)
  4. If using, stir in optional/additional chocolate chips

line the pan with foil and maybe also grease the foil? or use parchment paper? use your best judgement to be able to extract the brownies at the end!

bake at 350 for 30-35 minutes for the full recipe, probably 20-25 for the half recipe (I did 28 minutes this time, edges very done)
