Gougeres

source of this recipe has been lost to time. I haven't made it in several years for reasons, but my one record of it is crammed onto the back of a French-phrase-a-day calender from approximately 15 years ago. I'm writing it out here because past me has terrible handwriting and barely mentioned things like "put pastry in oven". (It is possible that the recipe is actually also from the calendar.)

  • 1/2 tsp salt
  • 6 Tblsp unsalted butter, chopped into bits
  • 3/4 c water
  • 3/4 c + 2 Tblsp flour, premeasured and ready to mix in
  • 4 eggs
  • 4 oz grated cheese

Preheat oven to 400 degrees

In a saucepan, mix salt, butter, and water. Bring to a rolling boil and then reduce heat to medium.

Remove from heat, add flour. Stir until becomes a ball. Return to heat, stir 10 seconds.

Transfer to mixing bowl, cool 10 minutes

Add eggs and cheese, mix in. Place in spoonfuls on a greased or parchment covered baking sheet

Bake 20-25 minutes
