Classic Olive Oil Cake

this one's from Bake From Scratch and then lightly modified

  • 3 eggs
  • 3/4 cup of sugar
  • 1/2 c olive oil
  • 1/2 c milk
  • 1/2 tsp fiori di sicilia
  • 1 1/2 c flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp kosher salt

Preheat oven to 350 degrees

Beat together the 3 eggs and the 3/4 c sugar.

Mix in the olive oil, milk, and flavoring. (Original recipe calls for a mix of vanilla and almond extracts. I don't care for almond really, and I love the fiori here)

Mix in the flour, baking powder, and salt.

Makes one 8 or 9 inch round cake or 12 cupcakes.

Bake the round for 30-33 minutes, the cupcakes for about 19-20 minutes
