Fast Focaccia

This is a writeup/small edit of No-Fuss Focaccia from King Arthur Baking

I'm very particular about the order things happen in, so I'm writing this to share with friends.

In a big mixing bowl (Ideally with a mixer, but we will try by hand today and I'll update if needed):

  • 1 Tblsp Instant Yeast
  • 1 1/2 c water
  • 3 Tblsp olive oil
  • 1 1/4 tsp salt
  • 3 1/2 c all purpose flour

Mix at high speed for 60 seconds, or by hand until it coheres and sticks to itself more than to the bowl.

Grease a 9x13 inch baking pan. Add 1 Tblsp of olive oil to the pan and tilt to coat.

Spread the sticky dough in the pan - it will be very sticky. If it's too sticky to spread, give it 5 minutes and then try.

Cover and let rise 1 hour ish.

Preheat oven to 375 degrees

Poke the risen bread all over with your fingers or the end of a wooden spoon, drizzle with about 1 Tblsp of olive oil, then sprinkle with herbs and/or salt. (I like flaky salt + 1 scant tsp each of oregano, thyme, and rosemary.)

Once the oven has prehet, pop the bread in for 30 minutes.

Let cool in pan at least 5 minutes, but then you can eat it. It's extra delightful same day.
